Barbara's Cookbook: Sweet Additions

Whether it’s homemade ice cream, brownie pie or cupcakes, adding a little sweet addition to them only makes them better. My dad loved the neapolitan ice cream for his sundaes and the more sauce the better. Mom was a strawberry ice cream girl and I am a vanilla ice cream girl over a melted brownie.

It seems only fitting we should share these two sweet additions to you from Barbara’s Cookbook.


Butterscotch Sauce

Homemade butterscotch cupcakes

INGREDIENTS

  • 1/2 stick butter

  • 1-1/2 c brown sugar

  • 1/2 c white karo syrup

  • 1/2 c cream

  • 1/2 tsp vanilla

DIRECTIONS:

Melt butter. Add brown sugar and syrup, stirring constantly, until it comes to a boil. Boil rapidly for 30 sec. and remove from heat. Cool slightly. Add cream and vanilla. Serve warm. Keeps for months in the refrigerator. Yields about 2 1/2 cups.

Hot Fudge Sauce

INGREDIENTS

  • 1/2 stick margarine

  • 2 squares unsweetened chocolate

  • 1 large can evaporated milk

  • 1-1/4 c sugar

  • 1/2 tsp vanilla

DIRECTIONS:

Combine ingredients in a heavy saucepan. Simmer until it thickens, about 30 minutes. Serve over brownies, vanilla ice cream or ice cream pie. Makes 3 cups. Can be prepared ahead and refrigerated.
