All I can say is YUM! When I lived at home in Belmont, we lived next to the sweetest lady named Mrs. Watson. Every year for Christmas, my mother would make her a spice cake. Every year my mom would try to change it up and every year, Mrs. Watson wanted the same thing. Next to my mom's pound cake, her spice cake is probably one of my favorites. And what makes it even better, aside from the fact that it's really easy, is that you can bake the mix in muffin tins instead of a bundt cake and freeze them to eat for breakfast. Think that Pumpkin Spice Cake sounds more like a Christmas thing, I can assure you that it's good any time of the year. As of matter fact, I think after writing this blog, I may have to make some muffins myself.
