Growing up, my mom's family would rent a house at the beach every summer for vacation. It was so much fun to catch up with my cousins and spend some time in the sun. As we got older, we would stay close to the canal so that we could go crabbing...which of course if we were lucky became dinner one night.
As for the other nights, our moms would each be responsible for one night's dinner and they would usually make something in the week leading up to the trip and freeze it. That way, all it needed was thawing and reheating during the week. This gave everyone more time to spend having fun instead of cooking in the kitchen.
Our Menu would generally look like this:
Night 1: Pizza from the local pizza place.
Everyone was always tired from traveling and no one wanted to worry about cooking.
Night 2: Baked ham, potato salad and one other vegetable.
That way, we would have leftovers for sandwiches the rest of the week.
Night 3: Spaghetti w Meat Sauce.
My mom's meat sauce was amazing but sadly, it was all in her head so I am still looking for the perfect meat sauce recipe.
Night 4: Spanish Rice and Salad
I am a big fan of this recipe. It's still one of my favorites.
Night 5: Local Seafood Restaurant
If you love seafood, a trip to a local restaurant is a must.
Night 6: Chicken Tetrazinni.
This was a huge favorite for everyone in our family.
Night 7: Leftover Night.
Leaving the next day, everyone was on their own for dinner and you could warm whatever you wanted. If there weren't any leftovers, dinner was usually a shrimp boil and any caught crabs.
