You may not be able to tell by the weather outside in the south, but today is the first day of fall! With that, comes one of my favorite times of year to cook...crockpot time. My crockpot is already out on my counter because of the pot roast I made the other day and will stay out for the next few months. What could be better than putting the ingredients in the cooker in the morning and having dinner ready that night.
This week, in honor of fall and crockpot time, I thought I would share some of the recipes that I found on Pinterest that are on my "to cook list." I have also included the pot roast that I made the other week. It was a huge success and I have a waiting list for the next time I make it again.
There is a definite method to my "crockpot madness" as some would call it. Because most recipes serve 6, I end up eating one meal and dividing the rest into small containers of leftovers. To make sure I have room in my freezer, I clean it out and throw away anything that has been in there a while and all leftovers. This leaves me with a clean slate and plenty of room for my different containers. I try to keep all of the same recipe together so I know what I'm eating. I divide my recipes into soups and entrees. I alternate recipes so that I end up having a little of everything in the freezer.
I love meat sauce spaghetti, so this Baked Spaghetti is perfect. All I need to keep on hand is bread to toast and salad mix. Add shredded cheese, a dollop of sour cream and some crackers to a bowl of Chili and you have a complete meal. Jambalaya is a meal in itself but a salad goes well with everything.
My favorite soup of all time is Potato Soup. Just like the picture, I add bacon bits and cheddar cheese. I leave the scallions off mine though. Growing up, my mom kept a bag in the freezer that she put all the leftover vegetables when there wasn't enough for another meal. Then when it was Vegetable Soup time, she was use that as part of her base. Finally, I had to include Broccoli Cheese Soup. I tend to puree my broccoli a little more than in this picture though.
Finally, as promised, I have included the recipe I used to cook Pot Roast the other week. I bought my meat from the butcher shop and let them pick my cut of meat after I told them what I was making.
