It seems like I have so many friends right now that are expecting babies and one of the things that my mother always taught me was - the last thing a new mother wants to do is cook. She also pointed out that as soon as a mother and father brought the baby home, they were flooded with food but after the family help left and they were on their own, there extra food was gone as well. So, with that in mind, I think it's time to make some frozen spanish rice casseroles for the freezer so I can take them over when their babies are born. This recipe is very easy to make ahead of time and freeze until needed. Just fill a 13x9 disposal pan and freeze. When mom was making it for us at home, she would put them in smaller tinfoil pans that we could pull out when we were hungry.
Be sure and write the name and heating instructions on the top of the tinfoil in a permanent marker so that either parent will know what's inside and how to cook it.
